Potato Latkes

As you probably noticed, I love breakfasts! Weekend breakfasts that is :)  when there is no need to rush anywhere, swallowing a cold cereal on the run.These crispy potato latkes make an ultimate Saturday morning treat and they are surprisingly ridiculously easy to make!

Ingredients (for 2 servings, makes about 8 small latkes)

2 large russet potatoes

1 egg

1 onion, peeled and minced

Salt

Pepper

Light vegetable oil

1. First, peel and grate potatoes on a large-hole side of a box grater.  I’ve tried using food processor for this, but for some reason latkes taste better when made from grated potatoes. They must love to think you’ve put some work into them…

2. Discard any excess liquid from the potato mixture. Add egg and minced onion, salt and pepper and mix thoroughly.

3. Heat some vegetable oil on a large non-stick skillet and begin cooking latkes. Using a tablespoon, place large spoonfuls of the potato mixture on the skillet, cook on medium heat 2-3 minutes on each side until brown.

4. Serve with a dollop of sour cream or yogurt! Delicious with smoked salmon :)

    This looks similar to the swiss rosti. This is yummy for breakfast!

    I am so with you on this one Elena. I am always huge weekend breakfast fan to invite friends and family as long as I don’t have to wake up early. Potato Latkes looks so yummy I might just be early bird if this is on the menu.

    This looks great! Thanks for doing it the old fashioned, ‘authentic’ way. People always try to tell me to load the potatoes up with milk and flour, to make them like a pancake batter. Latkes and potato pancakes are not the same thing (and I do love potato pancakes, too!). These look quick, simple, textured, and delicious. :)
