Watermelon Summer Salad

This fresh simple salad screams summer. You won’t find anything easier to make on a hot summer night when it’s 90+F outside.

Ingredients (for 2 servings)

About 1/4 watermelon (COLD!)

Handful of cherry tomatoes, halved

Pinch of cayenne pepper

Salt

About 1-2 tsp balsamic vinegar

Few fresh basil leaves, chopped

Spring salad mix

Remove watermelon’s skin and chop into large cubes. Arrange spring salad mix in a bowl, add tomatoes and watermelon chunks, season with salt and cayenne pepper and sprinkle with balsamic vinegar to taste. Enjoy immediately and stay cool!
