I saw this recipe on Food Network a while ago and it has become one of my weekend dinner staples – quick, easy and has a perfect combination of flavors!
Ingredients (for 2 servings)
2 garlic cloves, peeled and chopped
1 tablespoon freshly grated ginger
Salt
Black pepper
1 teaspoon ground cumin
½ teaspoon crushed red pepper (or more for a spicier version)
1 tablespoon vegetable oil
Pork tenderloin (about 1lb.)
Directions
1. Mix cumin with red pepper, ginger, garlic, salt and black pepper and run the pork tenderloin with this seasoning mix. Marinate for about one hour or refrigerate overnight.
2. Preheat the oven to 400F. Heat a large oven-proofed skillet with vegetable oil and sear the pork, turning occasionally for about 2-3 minutes until it browns evenly on each side.
3. Transfer the skillet to the oven and cook the tenderloin for 10 minutes, turning occasionally. Let it rest for 10 minutes after it’s done, slice and serve!
Perfect, I have a couple of pork tenderloin in the freezer.
